I should explain that lacon is the meat from the front legs of pigs. (Jamon is
the meat from the hind legs.) A laconada is sort of like a sardiñada, except lacon is served instead of fish and, in
this case, the meat was cooked in an oven instead of over an open outdoor fire. Obviously, you can't cook for 250 people in your own kitchen. This lacon was cooked
in the ovens of Panadería Ambroa, our own local bakery which, incidentally, makes my favorite bread. |
